OUR PASSION

Chile has been interwoven into the culture of the state in cuisine, rituals, and heritage. New Mexico Chile is staple ingredient in food in the State. It’s is put on everything – from breakfast foods to dessert. In New Mexico, chile is the meal. It’s a treasure preserved and eaten throughout the year. It evokes a feeling.

Chile Nuevo México. Known by many names red and green chile originate from the same plant.

Green chile retains its freshness because it is picked underripe. When the pepper is roasted, water fills its glands with steam. Flames blister the thick skin, which breaks down into char. What remains is a smokey, spicy pepper, soaking in self-produced oil.

 

WHO ARE WE?

We are the Hatch Portal to the Pacific Northwest and beyond, contributing a steady stream of roasted, peeled, chopped green chile and award winning chile sauces where we can: to stores, markets, at restaurants and directly.

In 2014, we became year-round , launching a shelf-stable product line of Red and Green Chile Sauce, Chopped Chile, Green Chile Salsa, and New Mexico Grown Smoked Chipotles in adobo sauce.

The roasted red chile goes through the same process as our green but fully matures on the vine first. Sugars develop, which lends to the sweetness and forward heat of the New Mexico Chile pepper.

An excellent compliment to anything green chile, Roasted Red makes a wonderful salsa, pizza topping or nacho. Give it a go with pasta.

Make breakfast burritos better

New Mexico Grown Green Chile brings out the flavor and heat of this chip-dipping, restaurant style salsa. We make it using the Meat Cheese Bread recipe. They put it in their breakfast burritos and you can, too. Put it on your avocado toast or anything you want to freshen up with this tomate-based blend.

One farmer, one field, one batch of extra special chile. This year we purchased an entire field of the hottest chile grown in New Mexico, the small and spicy Lumbre variety. Morrow farms was our grower for this batch in Las Uvas Valley, NM. After harvest we ran them through our flame roasters, delicately peeled and chopped each pepper, and packaged them immediately into our 16oz jar.

At over 2500 SHU this is definitely the hottest New Mexico chile product on the market that hasn’t been artificially heated up with capsicum extracts. At Los Roast, we take extra care in sourcing varieties with naturally occurring heat as we believe that New Mexico chile has a slowly building inner warmth, while other peppers are much more forward and aggressive with their heat profile.

However Lumbre also has amazing flavor, it is complex and buttery, with a umami profile and with its slowly building heat, it allows you to taste it before the spice kicks in! This product has been a long time coming, we are happy to offer it exclusively online and to small independent retailers.
